Succession Of Milk And Permanent The molars in some cases (as in the beavers) also grow from persistent pulps and possess undivided fangs. There is always a succession of milk and permanent dentitions. The chief chewing muscle is the masseter which is greatly developed, while the temporal muscle is small. The usual number of toes is five on both feet, but the pollex may be rudimentary or absent, and in the hind feet the number may be reduced to four, as in the hares, or to three, as in the agouti and jerboa.

All cheese starts as milk, but the milk may be sweet whole milk, a combination of sweet and sour milk, or a mixture of whole and skim milk. The first step in making cheese is to separate the whey (the liquid portion of the milk) from the curd (the solid particles). When milk is slightly sour, this may be done by placing the milk over very low heat for several hours. In modern manufacture, a culture of lactic acid-producing bacteria is added to sweet milk to cause the separation, and sometimes a combination of heat plus the culture and an extract of rennet may be used.


Calves need dry and clean individual pens during the first month of their lives. After that age they can be grouped with other calves of similar age. They are usually dehorned within a few days after birth, and each calf is identified with a permanent ear tag or tattoo. Extra teats on the udder are usually removed between the ages of one and two months. Record Keeping. One of the important practices in raising and caring for dairy cattle is to keep careful production records. These records are the basis for determining the proper amount of feed for milking cows and for deciding which cows do not produce enough milk to be profiitable, and which dairy bulls have the best milk-producing daughters.
